this week's veggie challenge

If it's in the lawn, it's a pesky weed.
If it's at the cabin, it's a sunny wildflower.

But if it's in the veggie bin, it must be... food(?)!


According to our CSA people, these dandelion leaves are more related to Chicory than to our familiar friend above. They also claim these are in high demand at Farmers' Markets. Eaten raw, they are quite bitter. I really like arugula, but these take that taste sensation to a whole new level. My Guy, who is gastronomically quite adventurous and open-minded, was pretty skeptical about these.

What's a girl to do?... smother them in bacon of course! Admittedly, they were still bitter, but it was quite a nice meal.
