challenged by veggies

This week's challenge was actually of the fruit variety -- 3 lbs of tiny apricots to be exact.
But when life hands you apricots, there's only one thing to do -- make salsa!

 Here is the recipe for Sunny Summer Salsa
If nothing else, it's very pretty.

Meanwhile, it looks as though the next challenge will be the monster zucchinis growing in our own backyard...

    My kids love grilled zucchini. Just cut them in half or quarters length wise and grill them on the bbq, turning to get all sides done. You don't even need to put oil on or anything. A little s and p if you like and that's it. They eat tons of them that way. Love the salsa too - bet it is yummy!
